Flapjacks
Start in a food truck by the park with one cast-iron pan and a bowl of batter. Customers line up at the window.
You cook, flip, and serve. Every fifth day the rent comes due.
Flick the pan up to toss a flapjack, too weak or too strong decides whether it lands flipped, lands on the floor, or splats. Tip the pan to slide it onto a customer's plate. Miss, and the spatula can still scoop it up.
Make it from scratch. Crack eggs in the bowl, throw in flour and milk, and whisk out the lumps. Better batter makes better pancakes. Keep the pantry stocked, else run dry mid-rush.
Grow the menu. Blueberries, chocolate chips, butter, syrup, fried eggs,, bacon, sausage, omelettes, waffles or full breakfasts spreads.
Move up.
Save enough and leave the truck for a bigger place Greasy Spoon,
Buy equipment or décor that brings customers back.
Each week the rent climbs.
Keep up, or close for good.
